
Two important elements of Mexican cuisine are chiles and tortillas. Chiles are used for seasoning with an estimated variety of over twenty seven chiles existing in Mexico alone, each varying in degree of spiciness and flavour. The Mexican chile can be red, green, yellow or black; fresh, dried or tinned. Meals in Mexican cuisine are often accompanied by tortillas of which there are two main types corn or flour. Corn tortillas are made from whole corn meal while flour tortillas are made from the a more widely found, traditional white wheat flour.Often tortillas are used as a sort of utensil for eating. Food is scooped or folded into a tortilla and eaten with the hand. Fajitas are the best example of this style of eating. Fajitas are named after the original cut of meat used in the dish (skirt steak) and is the most popular dish throughout the Pacificos and is known for its dramatic presentation.
Several of the dishes on our menu are what Mexicans call antojitos. These are generally found in the Mexican equivalent of an English fish and chip shop. Dishes such as quesadillas, tostados and enchiladas are typically found there.
Dishes can also be made with a flour tortilla and these are more typically found in the north of Mexico as well as with the large Mexican American population of the U.S. Dishes under this category would be Burritos, Quesadas and Chimichangas.
